If you've ever bitten into raw kale you know it can be tough to chew. Even when chopped finely, the leaves can still maintain a somewhat fibrous texture. So how can you combat this inconvenience? The answer lies at your fingertips (literally).
Unless you are using baby kale, which is tender by nature, the best way to tenderize kale is to massage it with your hands. Massaging kale may sound a bit odd but, trust us, it's a technique that yields amazing results in just minutes. This way you'll end up with softer kale that's perfect for salads and other raw preparations.
HOW TO MASSAGE KALE
- Remove the stems from the kale. Tear off or cut the leaves into desired size. Wash and spin dry.
- Put the kale in a bowl and add a small drizzle of extra virgin olive oil. Begin running your fingers through the kale and rubbing the leaves together.
- Continue the kale massage anywhere from 3 to 5 minutes. You'll know it's ready when the kale becomes soft and shiny.
Chef's tip: Extra virgin olive oil could be substituted by grape seed oil or any cold-pressed oil of your preference. Just be sure to use a very small amount (less a a teaspoon).
