How To Make A Killer Baked Pumpkin Pudding

Now that autumn has rolled around, have you given any thought to your holiday menu? Serving pumpkin for dessert is a great way to celebrate the bounty of the season. Pumpkin pie is standard fare but if you are looking for alternatives to pie (or something to serve in addition to) consider making a baked pumpkin pudding.

With its rich and creamy texture pumpkin pudding is a satisfying dessert that is great accompanied by whipped cream or ice cream. So how do you make it? If you've ever made bread pudding then making a pumpkin version will be a breeze. In case you need a refresher, below are the basic steps that yield a lusciously moist and delicious pumpkin pudding.

How To Make Pumpkin Pudding

  • Soak your chosen stale bread in warm milk until nice and soft. Challah bread and croissants make a lovely pudding but any bread will do. The bread should be at least a day old.
  • If using fresh pumpkin steam or roast it until tender. Otherwise, a can of pumpkin puree will do. Flavorwise, we recommend fresh over canned.
  • Blend your bread/milk mixture with the pureed pumpkin.
  • Beat eggs, sugar and vanilla until frothy then incorporate into the pumpkin mixture.
  • Add raisins, if using. Cranberries are also a nice alternative. Try soaking the dried fruit in warm brandy until plump then incorporate into the batter.
  • Butter a baking dish and pour the batter in.
  • Bake in a low and slow oven until cooked in the center.
  • Serve with whipped cream and a sprinkle of cinnamon, if desired.
