Summertime is the perfect time to indulge in a little jam making, especially if you happen to have a bounty of apricots at your disposal. Apricots are widely available during the summer months - whether it be at your local grocery store or farmer's market - and make a wonderful canvas for jam.

HOW TO MAKE APRICOT JAM

The recipe for apricot jam is simple and quick enough to make. You simply need to obtain one kilogram of apricots, half a lemon and about 330 g of sugar. Do not forget the sterilized jars in which to pour the jam once removed from the fire!

The recipe above calls for white sugar but, if you prefer, you can also make an excellent apricot jam with brown sugar. A quick tip: if you do opt for brown sugar use a smaller amount than what is called for in the recipe (for example instead of 330 g, it is enough 300 g). Brown sugar is not only a sweetener but also has a rather intense aroma that must always be regulated with care.
