Prepare a very hot wood-fire grill. You know the temperature is ready when the metal of the grill becomes white.
Make sure the grill is close to the embers. When the metal begins to glow, cook the Florentine steak for five minutes on each side and then 15 minutes "standing up".
In the meantime, keep a tray warm where you can then let the meat rest for three minutes once it’s finished cooking. This is the best way to ensure that the meat will release all of its juices and flavours, becoming even more tasty.
At this point, all that’s left to do is taste it and add salt according to taste.
