Japan has more three Michelin star restaurants than any other country, and now, following the release of the Michelin Guide to Kyoto and Osaka 2018, two more restaurants have joined this exclusive cub.
The first is Lida, a secretive Japanese spot in Kyoto, photos of which are scarce – you’ll just have to go there! – but we have pulled together some pics from the second, French restaurant Hajime, in Osaka, which currently sits at number 34 on the Asia’s 50 Best Restaurants list.
There, chef Hajime Yoneda is applying everything he learnt both in France and working for Michel Bras at Toya in Hokkaido to create beautiful, thought provoking plates that look to celebrate nature, the earth and space.
Enjoy the dishes below.

The theme of the 9-course degustation meal at Hajime 🇯🇵was named "dialogue with the earth 2017" 🌏 centred around interrelationships of human and our environment. This is one of the starters, named seimei 生命 life - flatfish/herring roe/firefly squid/saffron. The firefly squid 🦑, as the name implies, is said to be able to emit a mysterious glow which are considered a delicacy in Japan. They have a very soft texture with plump innards and a natural sweet taste. #sgfoodies #sgfoodie #foodie #blog #foodgasm #food #review #yummy #tasty #delicious #foodpic #instafood #foodstagram #gastronogram #japan #yummydelightsg_kix #osaka #michelinstar #asias50best #hajimeosaka
