If you've ever tried kimchi you'll know that deliciously spicy Korean side dish is addictive. Its combination of fermented cabbage and vegetables is wonderful paired with everything from plain white rice to stir fries. So how about making your own?
Usually making kimchi requires a long fermentation period but not with this easy kimchi recipe developed by Dzung Duong of Honeysuckle Catering. By following her tips and tricks your homemade kimchi can be ready in just three days. Yes, really!
You’ll need a head of Napa cabbage, a knob of ginger, sliced scallions, julienned carrots, Asian pear, lots of gochugaru (Korean chili pepper flakes), fish sauce and salted shrimp (which are optional). Aside from these ingredients you’ll need a tall glass jar which has been previously sterilized (for tips on doing this check out this video) and rubber gloves (these are ESSENTIAL).
