450g (3 cups) flour
200g (7 oz) butter
a pinch of salt
a bit of water
Place the flour and salt in a mixing bowl. Cut the butter into squares and rub it into the flour using your hands. Continue working the butter until the dough resembles breadcrumbs.
Stir in the eggs and enough water to form a dough. Knead well and form into two flattened discs. Wrap in plastic and refrigerate for 30 minutes.
Once the filling is ready roll out the dough. Place one a piece of dough inside a pie tin. Add the filling and top with remaining piece of dough. Cut two or three slits to allow steam to escape. Brush with a beaten egg and bake according to the recipe instructions.
