With their unmistakable round shape, cookies are emblematic of the American pastry making tradition. With three simple cooking tips you can make delicious cookies without baking powder which look and taste exactly like those of the traditional recipe.
1. Instead of baking powder you can create a raising agent by mixing cream of tartar and baking soda. When cream of tartar (potassium bitartrate) is mixed with baking soda and water, carbon dioxide is produced which creates bubbles during baking, causing the cookies to swell, just as they do when a chemical raising agent is used.
2. Before mixing, take care to sieve the flour well. This apparently irrelevant step will ensure that your dough is smooth and lump-free.
3. To obtain that characteristic inner softness of cookies, brown sugar must be used.
