Cloud Bread:  What is it and How do I Make it?

Instagram is a great tool for discovering new culinary trends, unearthing the rainbow bagel, avocado toast, cold brew coffee, smoothie bowls and many more picture worthy creations. The latest to catch our eye is 'cloud bread' the gluten–free totally flourless bread that's so light and airy it lives up to its namesake.

Cloud Bread - The Small Bread Without Gluten

More often than not the foods making a buzz on Instagram are the ones with healthy credentials, and the cloud bread is no exception. Being very low in calories and carbs and ideal for a gluten–free diet, this is the bread to go for if you're watching your waistline.

Cloud Bread - The Recipe

More good news: cloud bread works with both sweet and savoury flavors alike and you only need three ingredients to make it: cream cheese, eggs and baking soda.

Here's How:

Start by preheating the oven to 150 °C.
Separate the whites from the yolks of the three eggs.
Add 60 grams of cream cheese to the yolks and mix until smooth.
Add a quarter teaspoon of baking soda to the whites and mix the batter.
Mix the two mixtures together gently.
Spread small circles of the dough on parchment paper and bake for 20 minutes.

Once ready try eating your fresh cloud bread like a sandwich stuffed with tasty fillings.

Or the spread on a little jam as you would classic bread or toast. It's up to you.
