We love gnocchi here at FDL HQ and even travelled to Bologna a few years ago to meet with the famous Simili sisters and learn how they make it.
It's our interest in this Italian classic that led our attention to this recipe for beet gnocchi by La Cucina Prima Dona.
It still uses the classic base of potato but adds beet for flavor and that truly tasty deep purple color.
There's also a great recipe for pesto to go alongside the gnocchi.
