With barbecue season in full swing, having a few quick and easy marinades on hand is a must for impromptu grilling sessions. Versatility is a priority when selecting a marinade. 1. Lemon, garlic and olive oil
This Mediterranean combo is excellent for dressing grilled vegetables and marinating fish and chicken. For best results, mince garlic finely and combine with one part fresh lemon juice and three parts oil. Season with salt and pepper, if desired.
2. Soy sauce, sesame oil and scallions
The umami in this marinade makes it optimal for meats, shrimp and earthy vegetables like mushrooms and eggplant. Use 2 teaspoons of sesame oil for every 1/2 cup of soy sauce. Mix with plenty of chopped scallions. For a sweet and sour variation, mix a tablespoon of brown sugar into your marinade.
3. Yogurt, chilies and garam masala
This Indian inspired marinade is a great option for meats and chicken, as the acid in the yogurt helps tenderize meats. Puree the yogurt, a teaspoon or two of garam masala, a pinch of salt and as many chilies as you'd like.
4. Sour orange, olive oil and adobo
Adobo is a seasoning used throughout Latin America. It contains a blend of garlic powder, cumin, black pepper, salt and other spices. Combined with the juice of freshly squeezed sour oranges and olive oil, it makes a great marinade for fish and chicken. Use one part orange juice to three parts oil.
5. Beer, herbs, ginger and garlic
Beer makes a refreshing marinade for shrimp and vegetables. Puree garlic, ginger and any herbs from your garden with a bit of water. Add the beer and some salt. This is an easy marinade that you can also use to steam your food.
