1. Ginger Soda
For a refreshing alternative to lemonade, puree two inches of ginger with a bit of water then strain. Be sure to squeeze down the pulp to extract the most juice. Combine the ginger juice with one quart (one liter) of sparkling water and sweeten with simple syrup and refrigerate. It's divine!
2. Ginger Tea
Ginger tea is very popular in the Caribbean islands like Jamaica and Puerto Rico, even during the summer months. It's very easy to prepare.
