Zahav: The Definitive Guide to Modern Israeli Cuisine

Award winning chef and Israeli restaurant co-owner Michael Solomonov brings modern Israeli cuisine to family kitchens with his new cookbook Zahav.

Since opening the critically acclaimed Zahav restaurant in Philadelphia, USA in 2008  Solomonov has successfully put Israeli cuisine on the culinary map. This is the first chance to try out those melting pot recipes of his famed restaurant at home. Drawing on Middle Eastern, North African, Mediterranean and Eastern European influences, the book is also part biography of Solomonov's passion for his home country and inspired local food.

Adapted to local and seasonal ingredients as well as numerous regional and cultural influences expect classics such as mezze, fried cauliflower and the iconic hummus to pink lentil soup with lamb meatballs through to even more impressive dishes like Persian wedding rice; ‘if you’re feeling like a rock star and a whole roasted lamb shoulder with pomegranate and chickpeas that's a celebration in itself' Solomonov reflects.

Sweet lovers will not be disappointed either as desserts take equal pride of place in the collection of recipes. Solomonov worked in an Israeli bakery before attending culinary school and his experience shows. Dessert recipes abound along with baked goods including chocolate babka, cashew baklava cigars, and mom's honey cake with apple confit.
