Owned and operated by chef Justin Vrany, the restaurant offers up a range of sandwiches and salads that are served directly on paper on the tray.
All the products are made in house which allows Vrany to have such tight control over the waste of the restaurant. From black bean burgers to a pulled pork that’s smoked in house for 13 hours, the menu, which focuses on sandwiches and salads, looks delicious.
Vrany was also the protagonist of a show explaining his approach to cooking and how he goes about minimising waste on a daily basis. The video also shows exactly how he decided to use his first and only collection of waste.
