If your idea of a vacation includes a sandy beach and a phenomenal feast then pack your bags and head to the Caribbean. This weekend the island of Puerto Rico will host Saborea, the largest food festival in the Caribbean.
Set at the popular Escambrón Beach, just miles from the island's historic Old San Juan, the festival will run 21-22 April. It will showcase more than 60 restaurants, wines and chefs from around the world. Guests will also be exposed to the best coffee and rum the island has to offer.
In just its third year, Saborea (which literally translates to 'savor') has already catapulted Puerto Rico to the status of being the ''Gastronomic Capital of the Caribbean,'' as declared by the late American restaurant critic Craig Claiborne.
The festival highlights Puerto Rico's criollo cuisine - a mix of Spanish, African and native Taino influences. Fusion food from its very beginning, the core of this island's cuisine is sofrito - a fresh blend of native herbs, garlic, onions and sweet aji (peppers) - that is added to just about every dish.
