Food on the Edge: A Look at the Discussions to Come

On 23 and 24 October over 50 international food luminaries will gather in Galway, Ireland for JP McMahon's food symposium, Food on the Edge. Two days of insightful discussions covering cutting edge issues on the theme of 'The Future of Food' will be delivered by an international panel of food leaders and world–class chefs.

We're already excited about the stellar line-up, and now we've had a glimpse of some of the topics that will be presented by amazing speakers like Massimo Bottura, Christian Puglisi, Virgilio Martinez and Margarita Fores.

Each speaker will get just 15 minutes to discuss a topic close to their heart, in front of an audience of like–minded people. Below are some of the talks that have already got us thinking.

The Copenhagen launch of Food on the Edge 2016:


Christian Puglisi – Farm of Ideas, Integrating Cooking and Farming
One of Denmark's best chefs will discuss his latest venture of setting up a farmstead to supply his restaurant ingredients.

Daniel BurnsFood & Beer – Exploring the Possibilities
The New York–based beer professional is more than qualified to talk to us about beer and food.

Massimo Bottura – Cooking is a Call to Act
After taking the title of The World's Best Restaurant, Bottura is not one to rest, with one of his most recent projects being co–founding Refettorio Gastromotiva in Rio de Janeiro. We're not sure of the content, but it's guaranteed to a be rousing discussion.

Virgilio Martinez  – Uneven Surroundings
The Peruvian is always one to watch, and with this intriguing title we'll just have to wait and see what the dynamic chef has up his sleeve.

Matt OrlandoProducing Food Sustainably
The native Californian and owner/chef at Amass restaurant Copenhagen is pretty obsessed about cooking sustainably and reducing waste. We look forward to a passionate speech on how to tackle the future of food from him.
