Noma Viking Chefs Invade The U.S.

Just like Grant Achatz cut his teeth at The French Laundry and René Redzepi apprenticed at elBulli, so many young chefs make a pilgrimage to work at the world's best restaurants.

For the past three years, the hottest place to be was Redzepi's Noma in Copenhagen, which had topped The World's 50 Best Restaurants list sponsored by S.Pellegrino and Acqua Panna before sliding to second place this year.

Noma's apprenticeship program receives young chefs from all over the world who have gone on to do amazing things. Redzepi is making it a point of highlighting the chefs' accomplishments by listing them on his restaurant blog and urging fans to eat at their restaurants. 

Four Americans are among the two dozen Noma disciples on the list, they are:

  • Blaine Wetzel, former chef-de-partie at Noma and now head chef and partner at The Willows Inn on Lummi Island in Washington (pictured above)
  • Daniel Burns, former Noma pastry chef who recently opened the Brooklyn beer bar Torst and plans on opening Luksus restaurant this month
  • Mads Refslund, original co-founder of Noma and now a consulting head chef of ACME in New York City
  • Milton Abel, former Noma sous chef in pastry and now head pastry chef at The French Laundry in California

Keep these chefs on your radar because they will surely rise to stardom just like Rasmus Koefed, a fellow Redzepi disciple who openedGeranium in Copenhagen. Now his restaurant ranks 46th on the 50 Best Restaurants list.
