Sergio Herman - Oud Sluis - Cadzand
The Italian chef, Massimo Bottura, has just returned from the slow food festival in Tuscany. The event was part of an alliance formed in 2009 between the chefs and Slow Food Presida with the two groups coming together to work closely together.
Over 100 producers, 60 slow food creators and over 70 top chefs came together for the two day event covering issues such as distribution channels, supply methods and the role restaurants can play in local agricultural development. Massimo who runs the Osteria Francescana restaurant in Modena Italy was voted the number 4 on the 50 Best Restaurants list in 2011 and is a chef who is truly dedicated to the local producers of his region - something FDL found out when we went to Modena to interview him.
