For a chef whose made a career of using obscure Amazonian ingredients, you'd never believe Alex Atala starts his day with a cup of coffee with milk, bread and butter.

That's just one of the interesting facts Atala revealed to UCLA during an interview ahead of the university's Science and Food lectures. Atala is headlining the opening lecture in the series scheduled for April 17th. He will talk about cultural interpreation of flavors.

Atala is South America's most renown chef. He uses Amazonian ingredients like the aromatic root priprioca, at his restaurant D.O.M., which ranks fourth on the World's 50 Best Restaurants list, awards sponsored by S.Pellegrino and Acqua Panna.

So what would you expect to find in his fridge? Probably exotic hard-to-find ingredients, right? Well, the chef told UCLA he's most likely to stock his fridge with fruit, fish, herbs, vegetables and pepper. In case you were wondering, his favorite ingredient is...wait for it...salt.
