The Pacific regional final of S.Pellegrino Young Chef 2020 kicks off the 12 worldwide finals and will take place in Sydney, Australia on 26 August 2019.
Ten hopeful semi-finalists from across New Zealand and Australia, as selected by ALMA culinary school, will face off in a live cooking competition presenting their signature dishes to the local jury, of five professional chefs; Peter Gilmore (Quay, Bennelong), Jock Zonfrillo (Restaurant Orana, Bistro Blackwood), Danielle Alvarez (Fred’s). Dan Hunter (Brae) and Christine Manfield(Leader in the culinary industry) for adjudication.
The chefs will be tasked with the challenging job of selecting one finalist with a signature dish with the "wow" factor to represent the region at the Grande Finale S.Pellegrino Young Chef in 2020.
At this regional level there will be four awards up for grabs:
S.Pellegrino Young Chef Award
Awarded for each Region by an independent chef jury, and at the Grand Finale by the Seven Sages, this award is given to the chef who has unrivalled technical skills, genuine creativity and an exceptional, strong personal belief about Gastronomy.
S.Pellegrino Award for Social Responsibility
Voted by an internationally recognized voice on sustainability in food, for the dish that will represent the principle of socially responsible practises.
Acqua Panna Award
Voted for by mentors representing 50 countries around the world, for the dish that will be the one that reflects the perfect connection between different cultures on the plate.

The fourth prize is the Fine Dining Lovers Food for Thought Award - An award voted for by the online Fine Dining Lovers community, for the young chefs that best represent their personal belief within their dish.
