This recipe from Kari over at gi365 sets out some simple how-to steps on making vegetable noodles using the much loved Italian and French ingredient of zucchini.
By cutting the vegetable into very thin, long strips you're able to make noodle like shapes from nearly any veg.
It's really simple to do and we love Kari's suggestion of serving them with scrambled eggs, spinach, feta, and pine nuts.
