Gluten-free, low in carbohydrates, rich in magnesium, phosphorus and iron: we are talking about quinoa, a seed that behaves like a cereal and offers super nutritional properties and great versatility in cooking. QUINOA AS A FIRST COURSE
The most common way to cook it is to treat it like a cereal, such as spelt or rice, and use it to make hot and cold first courses with vegetables or fish. There are many recipes available but if you want a super dish made from this super food, try it with salmon and dried fruit: a concentration of healthy fats and flavour.
