Fooding, Food + Feeling: Breaking Customs

When Fooding was developed in the 90s, it came to mean a new dimension and concept of cooking. Chefs were no longer bound by the traditional rules, but, combining food and feeling, could strive to start a fooding revolution that would ultimately allow all new cuisine trends to come to life. To develop dishes in line with the fooding principle, chefs must have a unique mindset. They must strive for novelty and uniqueness, and feel that creation is more of a fun process and less of a technique-only matter. One of the most relevant examples of fooding is “fusion cuisine” that aims at combining more cuisines and culinary traditions in one dish, in order to create a new dish that defies definition. Fusion cuisine is a perfect example of the fooding trend, as it mixes and matched cuisines, various flavors and ingredients in an eclectic and surprising way. When everything about food seems to have been done or said, we rely on fooding to foster the development of something new that will surprise and delight us.
