An easy lamb recipe shared by the British chefs James Lowe and Isaac McHale, better known as 'The Young Turks': a sandwich recipe made with lamb and yogurt
Trim all sinew from heart and slice thin.
Warm piadina, and grill lambs heart.
Take heart and rest in lamb sauce/smoked fat mix.
Take piadina, spread sheeps milk yog on, put rocket and pickled cucumber on, then a few dots of anchovy emulsion.
Finally put in lambs heart and cut in half.
