Crunchy and delicate croquettes, a tasty way to cook burdock maintaining and enhancing its nutritional properties

- Burdock root 4 handfuls
- Thyme 3,5 g fresh, chopped
- Butter 30 g
- Wild onion 1
- Eggs 1
- Parsley 1 handful, finely chopped
- Bread crumbs To taste
- Corn flakes To taste
- Oil To taste

Preparation
Peel and cut the burdock and put it in a pot with 2 litres of salted water, let it boil for 25 minutes over low flame.
Drain and then mash the roots, then salt and add pepper.
Sauté the onion in butter then add the burdock, the bread crumbs, the beaten egg and the parsley.
Mix until smooth then create the croquettes (around 5 cm in diameter), sprinkle them with corn flakes and fry.
