Sweet And Spicy Thai Chicken Meatballs

As the weather gets warmer, we usually want to spend less time in the kitchen. These Thai chicken meatballs only take minutes to cook and make for a refreshing and exotic brunch.

The trick for these Thai chicken meatballs is to marinade the chicken for at least a half hour, that way it will soak up all the flavor from the fish sauce, lime juice and sugar. After cooking, you gently mold the chicken into a golf-sized ball and garnish with chilies, ginger, shallots and peanuts. 

Round out your Asian-inspired brunch with a salad of peach, citrus and coriander and an assortment of  vegan Thai sushi, Italian-style sushi or Moroccan vegan sushi. As a final touch, drop an edible flower ice cube into your cold drinks. Now, you are all set for a festive brunch!
