Being a lover of Indian food, I've got to say potato pakoras are my favorite Indian appetizer. This recipe for potato pakoras produces incredible tasty spicy fried wonders.
The most important thing you need for making potao pakoras is chickpea flour, which is called besan in Hindi. A good pakora batter has lots of spice - which can include chilies, coriander and fennel seeds. In my personal recipe, I enjoy adding a touch of garam masala to my batter.
Potato pakoras definitely need a dipping sauce. Yogurt is the perfect vehicle for a dipping sauce, since it cuts through the spice in the dish. A great accompaniment would be a mango lassi.
