Maaemo is a two Michelin starred restaurant in Oslo, Norway. Managed by Esben Holmboe Bang and Pontus Dahlström the kitchen is know for an ultra local approach to sourcing ingredients.
Dishes have that typically nordic aesthetic with grey, blue and green plates brought to life with colorful herbs, flowers and fresh fish. The idea is that the team want diners to notice the relationship between the raw produce, and the finished product.
They are very keen to cook with natural and organic ingredients, they're also known for producing amazing after dinner coffee for guests which after tasting one guest proclaimed "This is the most innovative coffee service in a restaurant."
